The Sparkling Shiraz is extravagant with full fruit and potent Shiraz varietal character. SB19 Sparkling Shiraz is ready to drink now, but could be collared for two to three years. The softness and violet character of the Merlot fruit shows through on the palate and the finish is healthy balanced. The best bottom wines are set aside each year for a trivial vintage ti raging. These wines have been released quietly as Non Vintage Sparkling Shiraz This is a reward for those loyal customers who have been drinking my Sparkling Shiraz for many years. These wines have been sent out as NV wines over the final two years. Peter gumball loves this style so much, Sparkling Red wine is now the majority of sparkling wine that he produces. Big, stuffed baselines are made from these grapes they have immense depth of color and fruit character, exclusive of tall alcohol. The resultant sparkling wine has a very packed palate. Vast emphasis is placed on these four characters of the wine, and to this last the interaction between the disgorged wine and the expedition liqueur is of huge importance. The wine will age and improve in the bottle for another three years, although the wine palate is set up for highest balance at the time of buy and therefore would be slightly out of balance at greater than three years bottle age. A Vintage Sparkling Shiraz is made in appropriate years. The Vintage wine is designed for a long life and therefore is made with the best Coonawarra Shiraz baselines from most years. When the wine is disgorged after this time, it is fresh and beautiful. Expert contracted growers grow all grapes. All the vineyards are machine harvested at evening to guard the tender nature of the berries. Primary fermentation The baselines are made as a conventional parched red: crushing, destemming, fermentation on skins to approximately 4.0 Be, with the pressings added back to the release run juice. Vintage Sparkling Red is from one vintage only. After additions, the baseline is filled into heavyweight bottles for secondary fermentation. As only the superior quality grapes are used, the Sparkling Shiraz is promoted to go with food: generally at dinner with friends, or for specific occasions such as Christmas or Thanksgiving. Advertising and promotions consist of cut case displays and cranky product buys in retail stores, limited advertising in newspapers, restaurant table talkers, stoppers, and aprons, Christmas wrapping, and extensive inshore tastings. Sparkling Shiraz has a huge tomorrow for the world. The ability to export Sparkling Shiraz to world markets has been based on the Australian image of the product.
